Sun Rays & Midnight BBQ's

The arrival of warmer weather and sun-filled days marked the beginning of BBQ season as well.  I'd recently bumped into Charlie again after what felt like forever and a day on my way to one of my regular trips to the GP so he and his friend Skye wound up being a wonderful addition to the guest list for our first proper barbecue party of 2017 complete with endless meat, salads, and free-flowing Pimms.  It was Mads' first time trying them and what with Henry taking on the role as bartender, he was just about the happiest person in the group for the entirety of the night!!

One Wednesday night following our traditional group drinks at our local, all of us suddenly starving and nowhere near ready to end the night, Ricardo excitedly came up with the idea of hosting a midnight barbecue.  I have to say, it went a lot better than I expected it to considering we'd all been drinking since around 6 pm at this point but hell, who turns down a BBQ?!  It's so damn cosy and who doesn't love a bit of grill food and summery cocktails?!

On the topic of food, I wanted to share a few snaps of a few of the delicious meals my private chef (Mads) and I whipped up within the first week of April incase you're looking for some new ideas and aren't as BBQ addicted as the rest of us ;)  They're all quite light and very easy to make as well--perfect for spring!


Rocket, feta cheese, celery, cherry tomatoes and boiled egg salad doused in balsamic and olive oil with Quinoa and chicken breast.

Salmon with oven-roasted yams, carrots, beets, and onions, accompanied with a Hollandaise sauce.

Rocket, celery, feta cheese and cherry tomatoes with balsamic vinegar and olive oil dressing, garlic bread, and a white cheddar and green pesto filled piece of chicken breast.
